An interesting thread from earlier on in the week over at Chef Knife Set, from their Q & A section
I can use both, but I have cheap cleavers/knives, and am in the market for a brand new set. I want them really sharp, professional-style and my budget is about $500

My take - at that budget, top quality is not going to be an issue. Â I would spend the money on a top spec chef’s knife, and buy a less impressive cleaver.
